Kholodnik from sorrel on kefir

A pleasant, tasty, refreshing vitamin soup for a summer lunch. This soup is prepared simply and quickly. This soup is suitable for those losing weight, if you do not put ham, boiled or baked meat in it, which are not the main ingredients. Also, those losing weight should take kefir with minimal fat content. Some housewives do not put radishes in this soup. And someone puts sour cream on a plate with a refrigerator. What’s so good about this soup is that you can experiment by adding something and excluding something from its composition. Men will be pleased with the presence of meat or ham in this recipe, as well as the option of serving it with boiled potatoes with vegetable oil, sprinkled with green onions, wild garlic or herbs. Try this soup too, bon appetit!

  1. STEP 1

    STEP 1

Let's prepare the ingredients for the soup. We sort through, wash the greens, vegetables, cut off the ends of cucumbers and radishes. Boil hard-boiled eggs, cool, peel. Boil or bake beef or other meat the day before. You can use ham or not use meat products at all; they are an additional ingredient in this recipe.

  2. STEP 2

    STEP 2

We start by finely chopping the sorrel.

  3. STEP 3

    STEP 3

Then pour it into a saucepan, add water, and bring to a boil. Reduce heat and cook for no more than 7 minutes. Remove from heat, cool.

  4. STEP 4

    STEP 4

Finely chop the green onions and dill.

  5. STEP 5

    STEP 5

Pour the chopped onion into a deep plate or bowl, add a couple of pinches of salt and mash with a fork. The onion will give juice, and the characteristic sharp onion taste will go away, which will then not be felt while eating.

  6. STEP 6

    STEP 6

Grate the cucumbers and radishes on a medium grater (or you can chop them finely).

  7. STEP 7

    STEP 7

Finely chop the boiled eggs and meat (or ham), if you add it.

  8. STEP 8

    STEP 8

Add the onion and salt to the pan with the cooled sorrel, add sugar, and mix thoroughly.

  9. STEP 9

    STEP 9

Now pour in kefir, squeeze the garlic through a press, add all the chopped products, mix. Let's taste it. If there is not enough salt, add to taste.

  10. STEP 10

    STEP 10

That's it, the refrigerator is ready! Pour the soup into bowls. You can put a spoonful of sour cream on each plate. This soup goes well with boiled potatoes. Bon appetit!

Irochka! Thanks for the recipe! I really hope that I can grow at least some sorrel this year. I love sorrel soups. Kholodnik always knew the composition with young beets and tops. But I’ve never tried it with kefir. I will definitely cook it!! I really like your recipe!! Thank you!!!

Irishka, the recipe is very interesting! Well, you can’t have it any other way... My husband’s favorite dish is sorrel cabbage soup! But I haven’t cooked the cold pan yet. I grabbed the recipe and will report back in May!
