Green lentil salad with tomatoes and mint

STEP 1

We take the ingredients for preparing a delicious lentil salad according to the list, wash the vegetables and herbs.
STEP 2

Before cooking, rinse the lentils several times, then pour in water at the rate of two glasses of water per glass of lentils, and put on fire.

Cook the lentils from the moment they boil for half an hour over low heat, covering the pan with a lid.
STEP 4

While the lentils are cooking, prepare the remaining ingredients: cut the onion into thin quarter rings.
STEP 5

Pour boiling water over the chopped onion.
STEP 6

Add vinegar to the onion in boiling water, stir and leave for 10 minutes.
STEP 7

At the end of cooking the lentils, salt them and after 5 minutes turn off the heat. During this time, the water from the lentils will boil away and the lentils will be ready.

Place the cooked lentils in a bowl and let them cool completely.

Core the sweet pepper and cut into small strips.

Chop the greens with a knife.

Cut the tomatoes into small cubes.

Cut the hard cheese into small cubes.

Place the pickled onions in a colander and let the liquid drain.

When the boiled lentils have cooled, add all the chopped ingredients to the bowl, add salt to taste and season the salad with vegetable oil.
