Gooseberry pie

Original, with an unusual taste, lush and delicious! Gooseberry pie is very similar to charlotte, where these wonderful emerald berries are used instead of apples. For some reason, many chefs avoid gooseberries, although baking with them turns out extraordinary - with a rich and bright taste.

  1. STEP 1

    STEP 1

How to make gooseberry pie? Prepare your food. Take natural yogurt with vanilla flavor. Refined vegetable oil, odorless.

  2. STEP 2

    STEP 2

Wash the gooseberries under running water and dry on a towel. Trim the tails on both sides. For the pie, it is advisable to choose dense berries, not soft ones, so that they do not burst during baking. Therefore, it is better to use green fruits.

  3. STEP 3

    STEP 3

Pour sifted flour, sugar, baking powder and soda into a deep bowl. Mix everything with a whisk. It is important to pre-sieve the flour to saturate it with oxygen. Then the cake will turn out airy and rise well during baking.

  4. STEP 4

    STEP 4

Add vanilla yogurt, vegetable oil and eggs to the resulting flour mixture.

  5. STEP 5

    STEP 5

Mix the dough with a whisk until smooth, it should turn out like thick sour cream. If necessary, you can independently adjust the desired consistency of the dough by adding a little flour or liquid.

  6. STEP 6

    STEP 6

Add most of the gooseberries to the dough and mix.

  7. STEP 7

    STEP 7

Grease a baking dish with vegetable oil and sprinkle with breadcrumbs. This will make it easier for you to remove the cake from the pan. Place the dough in the pan and smooth the top with a spatula. Any heat-resistant pan will work for this recipe. If you use a silicone mold, there is no need to coat it with oil and sprinkle with breadcrumbs.

  8. STEP 8

    STEP 8

Place the remaining gooseberries on top. Bake the pie in an oven preheated to 180°C for about 50 minutes. The exact time will depend on the characteristics of your oven. When the top layer of baked goods is slightly browned, check it for readiness: pierce it with a wooden skewer in several places; if the skewer comes out dry, then the mold (or baking sheet) can be removed from the oven.

  9. STEP 9

    STEP 9

Remove the finished cake from the mold, cool and sprinkle with powdered sugar. Cut the gooseberry pie into pieces and serve. Bon appetit!

Great recipe! Amazing dough, an excellent combination of sour gooseberries with a non-sweet dough. Sooo delicious. True, I deviated slightly from the recipe: I took more gooseberries, about 250 grams. And the second deviation - instead of yogurt, I made it twice with sour cream, and the third time I risked making it with kefir, which we make from milk using a starter. In the version with sour cream (thick), I did not change the amount of flour, everything was exactly according to the recipe, but in the version with kefir I added a little flour, because our kefir is more liquid. And in both cases it turned out great! The cake rose 2.5 times and did not fall. Perfectly baked in 50 minutes. And it's delicious! Tender, juicy, airy! Now I want to make an apple pie with the same dough. Thank you for the recipe!

I was pleasantly surprised by the resulting gooseberry pie. I won’t say that I’m a gooseberry lover, but this year it turned out to be very sweet at our dacha. Therefore, I wanted to use it not only, as usual, in compote. I found this recipe through a search engine. I measured out the food on the scales, only taking the gooseberries by eye. Instead of vanilla yogurt, I had classic yogurt (this is our local, thick and unsweetened, like Greek) and vanilla on the tip of the knife. The dough turned out to be quite thick; I did not mix the berries with the dough. First I poured half the dough into the mold, laid out some berries, poured the rest of the dough on top and poured the remaining berries. I baked it in an 18 cm pan for about 50 minutes (if you take a pan with a larger diameter, it will most likely take less time). The pie is simply incredible! Unexpectedly delicious baked goods, a real discovery for me!

I wanted to share a photo of my gooseberry pie, where you can clearly see how loose and moist its structure is. At the same time, it is quite sweet, the berries perfectly complete the whole harmony of taste. Super! Thanks for the good recipe!
