STEP 1
How to make fish with mayonnaise in batter? To begin, prepare the necessary ingredients according to the list. You can take any fish - white or red, fresh or frozen. I have fresh pollock fillet. STEP 2
How to make fish batter? In a bowl, combine eggs, mayonnaise and salt. Mix the batter with a whisk until smooth.
STEP 3
Add the sifted flour and mix again.
STEP 4
The dough should be thick. Leave the batter for 2-3 minutes so that it thickens a little more when the gluten is released from the flour. The batter should be viscous enough so as not to run off the fish like water. If the batter is too liquid, add a little more flour.
STEP 5
Wash the fish, dry it and cut it into cubes. Salt and pepper the fish. You can take a whole fish and fillet it yourself.

Dip each piece of fish into batter on all sides.
STEP 7
Heat vegetable oil in a frying pan over medium heat. There should be enough oil so that the fish is immersed in it halfway or more. Fry for a few minutes until golden brown. Then turn the fish over to the other side and fry until golden brown.

Place the finished fish on paper towels to remove excess fat.
