    STEP 1

How to make fish with mayonnaise in batter? To begin, prepare the necessary ingredients according to the list. You can take any fish - white or red, fresh or frozen. I have fresh pollock fillet. Frozen fish must first be thawed. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. You can make mayonnaise yourself. You will find recipes for homemade mayonnaise after the last step.

  2. STEP 2

    STEP 2

How to make fish batter? In a bowl, combine eggs, mayonnaise and salt. Mix the batter with a whisk until smooth.

  3. STEP 3

    STEP 3

Add the sifted flour and mix again.

  4. STEP 4

    STEP 4

The dough should be thick. Leave the batter for 2-3 minutes so that it thickens a little more when the gluten is released from the flour. The batter should be viscous enough so as not to run off the fish like water. If the batter is too liquid, add a little more flour.

  5. STEP 5

    STEP 5

Wash the fish, dry it and cut it into cubes. Salt and pepper the fish. You can take a whole fish and fillet it yourself.

  6. STEP 6

    STEP 6

Dip each piece of fish into batter on all sides.

  7. STEP 7

    STEP 7

Heat vegetable oil in a frying pan over medium heat. Read about how to choose the perfect frying pan, as well as how to choose the right vegetable oil in separate articles, links at the end of the recipe. Place the battered fish in one layer. There should be enough oil so that the fish is immersed in it halfway or more. Fry for a few minutes until golden brown. Then turn the fish over to the other side and fry until golden brown.

  8. STEP 8

    STEP 8

Place the finished fish on paper towels to remove excess fat.

  9. STEP 9

    STEP 9

Serve the battered fish hot or cold with any side dishes and sauces. I served it with French fries. Bon appetit!

I bought pangasius fillet (500 grams) in the store and decided to use it to cook fish with mayonnaise in batter according to this recipe. I had all the ingredients for the batter. The batter turned out to be quite thick. I let it sit for about 3 minutes, but, apparently, in my case I should have let the batter sit longer. With the first batch of fish, despite the thickness, the batter flowed a little and when turning it over, it “slipped” off the fish in some places (this did not affect the taste in any way). This did not happen with the second batch. I fried the fish in a cast iron frying pan for about three minutes on each side. The fish itself turned out juicy and tender, and the batter was very tasty. It perfectly emphasizes the taste of fish. It was a wonderful dinner. I served the fish in batter with a sweet and spicy tomato sauce. Maria, thank you very much for the recipe!

For the holiday table I prepared fish with mayonnaise in batter. I decided to cook pangasius because it is not bony and besides, this fish is a healthy sea fish. Thawed the fillet in the refrigerator, then washed and dried with paper towels. The pieces were marinated in a mixture of lemon juice, salt, dried dill and paprika. At this time I made the batter. I mixed it with a whisk. I added a spoonful of corn grits myself. The dough turned out to be quite thick and did not slide off the fish when finished. I fried it in a wok pan so that the fish pieces would cook quickly and evenly. After this, I placed the fish on paper towels to remove excess fat. The fish came out very tender and tasty! The batter is also delicious, fluffy, soft on the inside and crispy on the outside! This fish is delicious even when cold!
