Eggplants stuffed with meat and tomatoes in sour cream filling

We prepare the necessary products and spices to prepare delicious stuffed eggplants, either for dinner or for lunch in the oven.
STEP 2

Pour two tablespoons of vegetable oil into the frying pan, then add three hundred and fifty grams of mixed minced meat and fry it over high heat on the stove.
STEP 3

We cut out the cores of five not very large eggplants, cut in half lengthwise, which were previously soaked for one hour in salted water.
STEP 4

Place the cut out cores in a bowl.
STEP 5

Finely chop one onion.
STEP 6

Place the chopped onion in the frying pan with the minced meat and fry, stirring with a spatula.
STEP 7

Cut the eggplant cores into small pieces.
STEP 8

Place the chopped cores in a frying pan with the minced meat and onions and fry, stirring, for about five minutes.

Add salt and half a teaspoon of khmeli-suneli to the pan to taste.

Cover the pan with a lid and continue to fry all the ingredients on low heat for about seven minutes.

Fill the eggplants with the prepared hot minced meat and distribute it evenly.

Place the eggplants filled with minced meat on a baking sheet.

Cut five small tomatoes into thin slices.

Place tomato slices on top of the stuffed eggplants.

Grate seventy grams of any hard cheese on a fine grater.
STEP 16

Chop parsley, cilantro and dill quite finely.
STEP 17

Place four tablespoons of 15% sour cream in a bowl, then add two tablespoons of mayonnaise and three cloves of garlic passed through a press.

Place grated cheese in a bowl.
STEP 19

Add chopped greens to the bowl.
STEP 20

Add a mixture of black and red peppers to taste to a common bowl.
STEP 21

Mix all ingredients well in a bowl.
STEP 22

After fifteen minutes, remove the baking sheet with eggplants from the oven.
STEP 23

Apply the prepared dressing on top of each eggplant in a good, even layer.
STEP 24

Place the baking sheet with the eggplants in the switched off oven for seven to ten minutes, after which we remove the baking sheet from the oven and place the cooked stuffed eggplants in portions on plates.
