    Boil the eggs hard, cool and peel. Grate on a coarse grater or cut into small cubes. You can increase the proportion of eggs in the filling, for example, put not 2, but 3 eggs.

    Wash the eggplants, dry them, cut them in half lengthwise and carefully remove the pulp, being careful not to damage the walls. I used a special noisette spoon. You can also use a regular teaspoon.

    Place the eggplants in boiling salted water. Bring to a boil and cook for 5 minutes. Then remove the vegetables and dry them. This is necessary so that the eggplants become softer and the excess bitterness goes away. You don’t need to boil the eggplants, but simply sprinkle them with salt and leave for 5-10 minutes, and then rinse. Please note that not all varieties of eggplant are bitter.

    Stuff the eggplants with the prepared filling. The cooking time can be reduced if the filling is prepared at the same time as boiling the eggplants.

If the eggplants do not become soft during this time, you can increase the time until the vegetables are ready. Determine the exact baking time and temperature based on your oven.
