There was cottage cheese left, so when I saw a recipe for charlotte made from cottage cheese with apples, I didn’t think twice about it. I mixed twice as many ingredients. Looking ahead, I’ll say that you could have kneaded it more, the charlotte quickly disappears from the table) But first things first. I did everything according to the recipe. I ground the oatmeal in a coffee grinder (7 tbsp), beat 4 eggs with a mixer for 5 minutes, put the cottage cheese in a blender with a lid, this makes it easier for me to beat. Then I mixed everything into the dough, added vanilla on the tip of a knife, a little cinnamon (I have a mill, I did 5 turns), added apples and mazafati dates, having previously peeled both of them from the seeds. Why dates? Because we don’t have such sweet apples on sale. And since we are preparing PP charlotte, I decided to add dates so as not to sin with sugar. I threw in 7 pieces for my 2 servings. It turned out just right - not cloyingly sweet, but it also covered the sourness of the seasonal apples. People with a sweet tooth can throw more dates, I was equal to the volume of the apple, because... According to the recipe there should be 2 of them, I replaced one with dates. My men poured honey over the charlotte, but they liked it even without honey. The charlottes turned out soft, airy and tasty. And no one realized that baking is without flour :) Thanks to the author for the recipe.
