STEP 1

This one will pass better in the test. If your cottage cheese is grainy, then rub it through a sieve or punch it with a blender. Sift the flour through a sieve to saturate it with oxygen. Take small sweet and sour apples. Eggs are suitable for category C1.
STEP 2
To prepare the dough, take a comfortable, deep bowl so that no splashes fly when kneading. In the prepared bowl, combine the eggs with sugar. Shake them a little with a whisk so that when whipping the sugar does not start flying in different directions. Wash the eggs with baking soda first to remove harmful bacteria.
STEP 3
Then turn on the mixer and beat the whole mass a little until fluffy foam. There is no need to beat until fluffy. It is enough just for the sugar to dissolve in the eggs.

Add cottage cheese and sour cream to the beaten eggs. Stir.

Then add sifted premium flour into the dough. Add soda and a pinch of vanillin. First, stir with a whisk to incorporate the flour into the batter. Then turn on the mixer and mix everything until smooth. You may need a little less or more flour, depending on the consistency of the dough.

The finished dough will be slightly thick, almost like pancakes.
STEP 7
Rinse the apples in running water to remove any dirt. Cut them into 4 pieces and cut out the core. Then cut the apples into slices. If you wish, you can cut off the skin from them, I left them.
STEP 8
For the pie, take a springform pan with a diameter of 22 centimeters and line its bottom with baking paper. Pour the prepared dough into the mold. Place slices of chopped apples over the entire surface of the pie. Place the pie in the oven, preheated to 180 degrees, bake for about 40-50 minutes. The times indicated are approximate; be guided by the operating characteristics of your oven.
STEP 9
The finished pie will rise a little and become ruddy, golden in color. Remove the pie from the oven and cool slightly.
STEP 10
Lush, delicious charlotte with apples on curd dough is ready. If desired, you can sprinkle powdered sugar on top. Due to the added cottage cheese, the pie turns out a little moist, which is only good for it. Serve with hot, aromatic tea, coffee or cocoa. Enjoy your meal!
