Chicken liver soup

STEP 1
How to cook chicken liver soup? To begin, prepare the necessary ingredients according to the list. You can replace chicken liver with turkey, pork or beef liver. You can use fresh or frozen liver. The frozen product must first be defrosted on the bottom shelf of the refrigerator.
STEP 2
Rinse the liver thoroughly until the water becomes clear, remove fatty layers and remaining bile. You can cut large livers in half.
STEP 3
Peel the potatoes and cut into small cubes.
STEP 4
Peel the carrots and cut into small cubes.
STEP 5
Cut the onion into small cubes.
STEP 6
Wash the dill and parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, such as green onions, cilantro, or use a mixture of different herbs.
STEP 7
Boil 1.5 liters of water in a saucepan. Add potatoes and cook for 10 minutes until half cooked.
STEP 8
In a frying pan over medium heat, heat 1 tbsp. l. vegetable oil and butter. Add the chicken liver and fry, stirring, for 5-6 minutes. The main thing is not to overcook the liver, otherwise it will become dry and tough.
STEP 9
Transfer the liver to a saucepan with soup and cook, stirring, for 5-7 minutes.
STEP 10
Heat the remaining vegetable oil in a frying pan. Add the onion and fry for 3-5 minutes until light golden brown.
STEP 11
Add carrots and fry for another 4 minutes until golden brown.
STEP 12
Transfer the roasted vegetables to the pan. Next add the noodles, bay leaf, ground black pepper and salt. Cook, stirring, for 7-8 minutes until the pasta is ready. Instead of noodles, you can use any other small pasta.
STEP 13
At the end, add chopped herbs.
STEP 14
Remove chicken liver noodle soup from heat. Cover the pan with a lid and let the soup simmer for about 10 minutes.
STEP 15
Then pour into plates and serve. Bon appetit!
