STEP 1
Knead the dough from eggs, water, flour and salt in the indicated proportions. Let the test rest for 20 minutes.
STEP 2
Prepare minced meat: the meat for minced meat is chopped with a knife, it is usually fatty lamb or beef, potatoes, onions, salt and ground pepper are added to it for the filling.
STEP 3
Finely chop the onion.
STEP 4
Add to minced meat.
STEP 5
Grate the potatoes on a fine grater and also add to the minced meat. Salt and add pepper from the grinder.
STEP 6
Roll out the dough into a thin layer - 0.3-0.5 cm, cut into squares. Place minced meat in the middle of each square and mold it first with a handkerchief, and then connect the edges - you will get these little ears with sharp ears.
STEP 7
Cook on a steamer rack for about 40 minutes, I add a bay leaf to the water.
STEP 8
Serve hot with broth or sour cream, traditionally with katyk or syuzma (national fermented milk products), very tasty! Enjoy!
