    How to make Bulgarian Banitsa? Prepare all ingredients. Choose medium-sized apples, sour or sweet and sour varieties. It is better to remove the oil from the refrigerator in advance. It should be soft (but not melted).

    Prepare the dough: sift the required amount of flour, make a hole in the flour, add water and egg. Stir and knead a fairly tight dough (it should form a ball). Since flour differs in its properties, I advise you to pour not all the flour into a bowl, but 50-70 grams less. This way, when kneading the dough, you can decide whether you need to add the remaining 50-70 grams or whether the desired consistency has already been achieved.

    This is how the dough turned out. Please note that there may be a little more or a little less flour than indicated in the recipe. Watch the consistency! Set the dough aside for 30-40 minutes and start filling.

    Grind the cottage cheese with butter and sugar.

    Add eggs, vanillin (I used vanilla sugar, see the instructions on the package for the dosage and methods of adding vanillin), flour and honey. And mix everything well.

    The curd filling is ready! If it turns out a bit runny, add a little more flour. (It is difficult to work with a filling that is too liquid; it will spread throughout the dough)

    Peel the apples and cut into small cubes.

    Let's return to our test. Divide the dough into 4 parts. Roll out each piece as thinly as possible into a rectangular layer.

    It should look something like this. Leave the dough to dry a little. Meanwhile, melt the butter for the filling (50 g) and cool. Next, brush the dough layers with melted butter.

    Carefully spread the curd filling onto each layer of dough, not reaching the edges by about 2 cm.

    Place chopped apples on top of the curd filling.

    Now bend the edges of each layer into a boat and carefully roll it into a roll. Roll the resulting roll into a spiral and place it in a baking dish, in the center, also greased. Wrap subsequent rolls around the resulting spiral.

    Brush the Banitsa with melted butter on top. This is what our pie looks like when raw. Place in a preheated oven at 175-205 degrees for 35-55 minutes (I had the cake ready in 40 minutes at 200 degrees, you need to rely on the features of your oven)

Watch the video recipe for this pie from Bulgaria. You need 2.5 tablespoons of butter in the dough. I prepared this recipe from the website and threw it all away. The butter bubbles!! Tasteless.
