STEP 1
How to make apple pie with sour cream filling? First of all, prepare the dough. How to make the dough? Prepare food for him. Choose high-quality, natural butter that complies with GOST. Place it in the freezer two hours before cooking; it should become very hard to make it easier to grate. I replaced the mayonnaise in the recipe with the same amount of sour cream. The fat content of sour cream is 20-30%.
STEP 2
Take a dough bowl and sift flour into it. This will not only remove possible debris, but will also enrich it with air, which will make the baked goods more fluffy and softer. Then add baking powder, vanillin and a pinch of salt to the flour. Salt acts as a flavor enhancer in sweet dough. Add sugar. Stir all the dry ingredients until they are evenly distributed throughout the flour.
STEP 3
Remove the frozen butter from the freezer and grate it on a coarse grater directly into the bowl of flour. To prevent the butter from melting from the heat of your hand, wrap it in a bag. And at the very end you can roll it in flour, so it won’t slip out.
STEP 4
Using your hands, rub the flour mixture into the butter until sand crumbs form. Work quickly - the colder the butter in the dough, the better the shortcrust pastry.
STEP 5
Beat the egg into the crumbs, add sour cream and mayonnaise, if using it. Start kneading the dough, mixing it first with a spoon and then with your hands.
STEP 6
The dough will very quickly become homogeneous and form a ball. Cover the bowl with cling film and place it in the refrigerator for 30 minutes.
STEP 7
Meanwhile, prepare the filling. How to make the filling. Prepare food for her. Take medium apples, brown sugar or regular white sugar, whatever is available, will do. Brown will give baked goods a caramel note. Add cinnamon to taste, you can use vanilla instead or add nothing at all - a matter of taste.
STEP 8
Wash the apples and cut them into quarters. Remove the seeds and cut off the skin. Cut the peeled apples into slices.
STEP 9
Place them in a dry frying pan, preferably with a non-stick coating. Add sugar and cinnamon. Place the frying pan on the lowest heat. Simmer the apples on the fire for about 5 minutes, they will soften a little, release juice, and the sugar will melt. Stir them a couple of times with a spatula. The filling is ready.
STEP 10
Prepare the filling. How to fill? Prepare your food. Choose high-quality, natural sour cream; the fattier it is, the tastier it is. But it’s also higher in calories, keep that in mind. Instead of powder, you can use sugar, and instead of potato starch, you can use corn starch; you will need twice as much of it.
STEP 11
Place all ingredients for filling in one bowl - sour cream, egg, powder and starch.
STEP 12
Whisk everything until smooth. The filling is ready.
STEP 13
Remove the dough from the refrigerator. Cut off a third and put it back - it will be used to decorate the top. Roll out two thirds of it onto parchment paper into a circle. My dough turned out a little sticky, I rolled it out between two sheets of parchment. But you could just sprinkle it with flour.
STEP 14
Transfer the dough into a baking pan, I have a springform pan with a diameter of 20 cm. Form the sides of the pie. Since the dough contains a lot of oil, there is no need to grease the pan. I removed the parchment so you can bake on it.
STEP 15
Pour sour cream filling onto the dough. Place the apples on top and pour the resulting caramel over them. Distribute the apples evenly over the filling.
STEP 16
Bend the sides a little so that they fit over the filling. From the remaining third of the dough, make the top of the pie - you can cut it into strips and make a lattice, you can, like I did, cut out decorations in the form of flowers and leaves from it. Or you can just roll out the dough into a circle and make a regular top.
STEP 17
Preheat the oven to 180°C, I have an electric oven, top-bottom mode. Place the pie pan in it. Bake the pie for 40-45 minutes, until golden brown. Remove the finished pie from the oven and cool, then remove from the pan.
STEP 18
Serve the pie, cut into pieces, with tea or coffee. Once cooled, it cuts perfectly and holds its shape. Bon appetit!
