STEP 1

How to fry zucchini pancakes in a frying pan with an egg? Prepare your food. I prepared one serving, it came out just from one zucchini and one egg. You may need more or less flour than specified in the recipe, this will depend on the juiciness of the vegetable.
STEP 2

Wash and dry the zucchini. What kind of zucchini works best? Choose young fruits with delicate skin and small seeds. If using more mature squash, trim off the rough skin and scoop out the seeded center. Cut off the ends of the zucchini. Grate it on a coarse grater.
STEP 3

Salt the grated zucchini mass and leave to stand for 5 minutes. Due to the salt, liquid will be released from the zucchini; it must be drained. To do this, squeeze the zucchini, using a sieve, a towel, or just with your hands. Drain off the released juice - the mass should become dry.
STEP 4

Rinse the greens and dry with paper towels. Chop it finely. I used dill, parsley works well.
STEP 5

Beat an egg into the zucchini mixture, add chopped herbs and a little flour (about half of the total amount).
STEP 6

Mix the ingredients until smooth. If the mixture is still liquid, add a little flour.
STEP 7

Heat a frying pan over medium heat. Pour some vegetable oil on it. Spoon the batter into the pan, forming round pancakes.
STEP 8

Fry them until golden brown on one side, then turn them over to the other. If the pancakes tear and don't turn well, add more flour. Fry the pancakes on the other side until golden brown. It is better to keep the fire low so that the zucchini has time to steam, but does not burn.
STEP 9

Remove the finished pancakes to a plate with a paper towel to absorb excess fat. Fry all the dough in this way. I got 6 pancakes from one zucchini.
STEP 10

For the sauce, add salt, paprika and black pepper to the sour cream to taste. Stir. For the children's table, simply serve sour cream.
STEP 11

Serve the pancakes along with the sauce. Bon appetit!
