  1. STEP 1

    STEP 1

How to bake a yeast pie with fresh cabbage in the oven? First prepare the ingredients for the dough. Warm the milk slightly. It should be warm, but not hot, otherwise the yeast will die. You can read more about the features of working with different types of yeast in the article, the link to which is at the end of the recipe.

  2. STEP 2

    STEP 2

In a suitable sized bowl, dissolve the yeast and sugar in the milk.

  3. STEP 3

    STEP 3

    Sift flour into yeast mixture.

  4. STEP 4

    STEP 4

Mix the mixture well with a whisk until the lumps of flour disappear. Cover the dough with a towel and leave in a warm place to rise for about 20 minutes.

  5. STEP 5

    STEP 5

Measure out the ingredients for the dough. The milk should also not be cold. Warm it until slightly warm. Take odorless vegetable oil.

  6. STEP 6

    STEP 6

Sift the flour into a bowl with high sides. Flour enriched with oxygen makes the dough rise easier and faster. And the finished baked goods will turn out more fluffy.

  7. STEP 7

    STEP 7

By this time, the dough has doubled in volume. Many bubbles appeared on its surface.

  8. STEP 8

    STEP 8

To knead the dough, take a spacious container with high sides. Whisk the eggs with salt and sugar until smooth.

  9. STEP 9

    STEP 9

Pour in slightly warmed milk and stir.

  10. STEP 10

    STEP 10

Lay out the suitable dough, stir.

  11. STEP 11

    STEP 11

    Add vegetable oil, stir lightly.

  12. STEP 12

    STEP 12

Pour sifted flour into the resulting mass (about 3/4), stir the dough first with a spoon. Do not pour out all the flour at once; you may need less or more of it than indicated in the recipe, since the properties of flour may be different. You can read more about this in the article, the link to which is located at the end of the recipe.

  13. STEP 13

    STEP 13

Add the rest of the flour in small portions, while mixing the dough with your hands. Watch its consistency.

  14. STEP 14

    STEP 14

The dough should be homogeneous, soft, pliable, and not sticky to your hands. Cover the dough with a towel and leave in a warm place to rise for 70-80 minutes. Rising time will depend on air temperature and yeast activity.

  15. STEP 15

    STEP 15

While the dough is rising, prepare the filling. It can also be done in advance. Boil the eggs hard for 8-9 minutes. Immediately place the boiled eggs in cold water to cool. The sharp temperature contrast will make the shell easier to clean.

  16. STEP 16

    STEP 16

Cut the pre-peeled onions into small cubes.

  17. STEP 17

    STEP 17

Wash the cabbage and remove the top leaves. Chop the cabbage into thin strips.

  18. STEP 18

    STEP 18

In a frying pan with added vegetable oil, fry the onions, stirring occasionally, for 3-4 minutes.

  19. STEP 19

    STEP 19

Place the prepared cabbage in the pan with the onions and stir. Simmer the cabbage over moderate heat until soft. Halfway through cooking, salt the cabbage, add ground black pepper or any spices to taste. If the cabbage is young, its volume will decrease significantly when stewed.

  20. STEP 20

    STEP 20

Peel the boiled eggs and cut into small cubes.

  21. STEP 21

    STEP 21

Cool the finished cabbage, combine with boiled eggs, and stir.

  22. STEP 22

    STEP 22

The dough has risen and its volume has increased 2.5 times.

  23. STEP 23

    STEP 23

Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into 2 unequal parts: larger for the base of the pie, smaller for the top.

  24. STEP 24

    STEP 24

Roll out most of the dough into a round layer. Its size should be larger than the diameter of the pan in which the cake will be baked.

  25. STEP 25

    STEP 25

Grease a baking dish with a diameter of 22-24 cm with vegetable oil. I covered the bottom of the mold with parchment. Transfer the rolled out dough into the pan, spreading it over the bottom and sides.

  26. STEP 26

    STEP 26

Spread the filling onto the dough in an even layer.

  27. STEP 27

    STEP 27

Place the edges of the dough over the filling.

  28. STEP 28

    STEP 28

Roll out the smaller part of the dough in the same way. Cut out circles of dough using a round notch and place them on top of the filling in the shape of a flower. But you can make the top of the pie at your discretion and decorate it as you wish.

  29. STEP 29

    STEP 29

To grease the pie, beat the yolk with milk until smooth.

  30. STEP 30

    STEP 30

When forming the top of the pie, there should be small holes between the circles of dough to allow steam to escape during baking, or you can make a hole in the middle. Using a pastry brush, brush the top of the pie with the yolk mixture.

  31. STEP 31

    STEP 31

Bake the cabbage pie in an oven preheated to 180 C for about 30-35 minutes until golden brown. If the top of the pie browns prematurely, cover it with foil and continue baking. Cooking time and mode may vary. Read more about how to choose the right baking time and temperature in the article. The link is at the end of the recipe.

  32. STEP 32

    STEP 32

Cool the finished pie a little, cut into portions and serve. Bon appetit!

My family loves cabbage pies the most. And as soon as young cabbage appeared on the market, I decided to bake a yeast pie with fresh cabbage in the oven. The cooking method is described in very detail and clearly. Kneading dough is a pleasure! The dough rose literally before our eyes, especially since it was hot in the kitchen. And in winter, I put the dishes with the dough in a slightly warm oven or in the microwave. I used first grade flour, sifted it first, the quantity turned out to be a little more than in the recipe. The dough was kneaded soft, homogeneous, it came in a plastic bag. For the filling, I stewed onions, cabbage and added carrots with dill. I thought that the boiled eggs would have a strange taste, but the filling turned out very tasty! In general, the pie turned out to be a delight! Soft, juicy, tasty. The next day remained the same. Thanks for the recipe!

Everything worked out! And what’s also important is that everyone liked it, and now I’ll cook it. Yeast pie with fresh cabbage in the oven from fresh cabbage can become a complete dinner if served with meat broth, for example. Also ideal for soups. Or you can eat it simply with milk or kefir. The pie is very tasty and airy! Yes, it took me a little more time in the oven than indicated by the author, but that’s normal, ovens are different.

Thanks for the recipe. Everything is clearly described and easy to prepare. However, I made the filling to my taste: without eggs and added my favorite seasonings to the cabbage. And I made the top part of the pie in one continuous layer (I didn’t want to bother))). Unfortunately, there is no photo, because, having decided to save money, I did not brush it with egg, and the pie turned out not “photogenic”))). But the taste, mmmmmm!!!! Yummy!!!
