This way the fish will retain more nutrients. Take 10 - 20% cream, the main thing is that it is fresh.

    Sterlet is quite slippery due to the large amount of mucus on the surface of the carcass. Sometimes it is advised to pour boiling water over the fish to clean it, but I do not recommend doing this; the sterlet may lose its taste. It is better to use coarse salt and paper napkins. Sprinkle the carcass with salt and clean off the mucus from head to tail. Be careful, this fish has a lot of sharp spines! After this, rinse the sterlet, dry it and sprinkle with salt and pepper.

    Wash the potatoes to remove dirt, peel and cut into small cubes. The finer the cut, the faster the potatoes will bake.
