Sterlet is combined with almost all the ingredients with which it is boiled, stewed, fried, marinated, which serve as filling for its insides. One note: recipes with sterlet cannot contain overly rich, very aromatic, strong seasonings: curry, cloves, cinnamon, cilantro. The taste of the pulp is very delicate, do not overpower it. How can you cook this “royal” fish?1) Boil without salt and seasonings in dry white wine.2) Fry in the oven and fold it into a “ring” - the fish carcass is flexible, quite long.3) Boil an excellent fish soup. 4) Stuff with mushrooms, herbs, vegetables, rice, potatoes. 5) An interesting method of baking sterlet in a salt shell. You will need at least three kilograms of sea salt, but the fillet will absorb exactly as much spice as needed. 6) Marinate and bake portioned fillets on the grill. The main thing is to remember to remove the entrails, external gills and fins. This fish goes on sale unprocessed, but alive. It is not cheap, so it is better not to buy a frozen product.
