STEP 1
How to make water-fried pies in oil? First, wash and peel the potatoes.
STEP 2
Boil the potatoes in salted water until tender.
STEP 3
Make mashed potatoes, drain the potato broth and let it cool slightly
STEP 4
Prepare the necessary ingredients for the dough. If the broth turns out to be less, add some water. If you have a different filling, replace the broth with warm water or milk with water (50:50)
STEP 5
Dissolve sugar and salt in warm potato broth
STEP 6
Mix dry yeast with flour. I almost always cook with dry yeast - this significantly saves cooking time. Be sure to sift the flour. This will saturate it with oxygen, and the finished dough will turn out more tender and fluffy.

Combine the dry and liquid ingredients and knead the dough, knead it well for 10-15 minutes, at this stage I often resort to the services of a bread machine.

The dough turns out smooth and elastic, pleasant to work with. If necessary, add a little more flour. If the dough is too stiff, add a little water.
STEP 9
Cover the bowl with the dough with a towel and leave in a warm place for 1 hour
STEP 10
Prepare the necessary ingredients for the filling. I have pork and beef, but any meat, chicken or even liver will do here. First pass the meat through a meat grinder.

Peel the onion and chop finely.
STEP 12
Fry the onion in vegetable oil until golden brown.
STEP 13
Add minced meat to the onion, salt and pepper to taste, fry everything together for about 5 minutes.
STEP 14
Add fried meat to mashed potatoes.
STEP 15
Mix everything thoroughly.
STEP 16
The filling is ready.

After an hour, the dough should increase in volume.
STEP 18
Divide the dough into small balls, about the size of a chicken egg. From the specified amount of ingredients I got 25 pies.

Use your hands to form the cakes.
STEP 20
Place filling on each tortilla.
STEP 21
Seal the edges well and form into pies. Place them seam side down.
STEP 22
Leave the pies under the towel for 10-15 minutes to allow them to rise.
STEP 23
Fry the pies in hot vegetable oil. It should reach approximately the middle of the pie, be very hot, but under no circumstances burn. I fry in an old cast iron frying pan - it has a higher heating temperature. The pies are growing right before our eyes.
STEP 24
Turn them over and fry them on the other side
STEP 25
