Vegetable zucchini roll with cheese

Step-by-step preparation
STEP 1
I prepared the necessary ingredients to prepare the zucchini roll. I fried onions, carrots, and mushrooms in a frying pan in advance. Transfer the cooled filling to a separate plate.
STEP 2
I grate the cheese on a fine grater.
STEP 3
I grate the zucchini on a coarse grater.
STEP 4
Salt and let stand for 10 minutes to release the juice. I drain this juice.
STEP 5
I add chicken eggs and chopped greens to the squeezed zucchini.
STEP 6
Flour, baking powder, spices.
STEP 7
I mix everything into a homogeneous mass.
STEP 8
I put the finished mass on a baking sheet covered with a silicone mat and distribute everything evenly. I bake in a preheated oven at 180 degrees for 20-25 minutes, depending on the oven. I bake until golden brown.
STEP 9
I take the zucchini crust out of the oven and add the filling of carrots, onions and mushrooms. Sprinkle with grated cheese (I leave a little cheese to decorate the roll).
STEP 10
I roll it up.
STEP 11
I grease the top of the roll with sour cream and sprinkle with grated cheese.
STEP 12
Place in the oven again for 5-7 minutes to form a golden crust.
STEP 13
I take the roll out of the oven and let it cool completely.
STEP 14
