    How to cook vegetable soup with chicken broth? Pour clean cold water into the pan. Wash the chicken breast and cut it in half. For a rich broth, it is better to choose breast on the bone, but without skin. Place the chicken in a saucepan and cook over medium heat. Cooking time is thirty minutes after boiling water. Remove the resulting foam with a slotted spoon.

    You don't need chicken meat for this soup, just broth. The chicken can be used, for example, to make a salad. Wash and peel the potatoes. Cut it into small cubes. Place in a saucepan with broth. Cook the potatoes for ten minutes after boiling.

    Chop the cabbage into thin strips and add to the pan.

    Wash and peel the carrots using a vegetable peeler or a small sharp knife. Grate the vegetable on a coarse grater. Also add to the pan.

    Wash the pepper, cut it and remove the core and seeds. Cut the pulp into small cubes. Peel the onions and finely chop them. Place the prepared vegetables into a saucepan.

    Add green peas at this stage. It can be either fresh or frozen. If desired, frozen peas can be thawed in advance, but this is not at all necessary. I added frozen peas straight from the freezer to the soup.

    Simmer the soup over low heat with the lid closed for twenty minutes. Then add salt and pepper to taste. Add finely chopped parsley and cook for a couple more minutes. Then turn off the fire. The soup is ready, you can serve it with sour cream and fresh herbs. Bon appetit!

I liked the recipe for vegetable soup with chicken broth because of the large amount of vegetables included in its composition, but I prepared it not with chicken, but with beef broth. The overall taste of the soup is dominated by the flavor of bell pepper. To balance it out, I added spices to taste - a little ground white pepper, allspice, bay leaf and a pinch of oregano. It turned out to be a wonderful tasty soup!
