    Let's prepare the ingredients. It is not necessary to clean the Jerusalem artichoke; it will be enough to wash it thoroughly under running water and cut off all protruding tubercles. Peel the potatoes and onions; if the zucchini is young, you can leave it like that.

    Grate potatoes, Jerusalem artichoke, zucchini and onion on a medium grater. To save time, I grate using a food processor.

    Add chopped garlic cloves and chopped herbs to the grated vegetables.

    If desired, add a handful of grated cheese (I love cheese, so I always add it).

    Add 2 eggs, salt and pepper. Mix thoroughly.

    Add 2-3 tablespoons of flour (check the consistency of the dough), mix and you can fry the pancakes.

Ideal recipe composition. There is an abundance of Jerusalem artichoke now, I didn’t know what to do with it, and gnawing it raw, although tasty, is boring. Cheese, in addition to taste, gives the pancakes a slight melting quality and “holds them together” well inside. True, I did without potatoes, but added carrots for color and benefit. Judging by the fact that the plate of pancakes was empty in literally half an hour, my family liked the vegetable pancakes, but no one could recognize the Jerusalem artichoke) I recommend the recipe!
