Steamed dumplings in a double boiler

Delicious homemade dumplings! Both adults and children love it! Everyone in our family loves dumplings. My husband with cabbage, my son with cottage cheese and cherries, me with potatoes. Since the cooking process is labor-intensive, I usually cook dumplings on the weekend. With the advent of the multicooker, I began to steam them. Using choux pastry makes the modeling process much easier. The choux pastry is very soft, flexible and durable.

Step-by-step preparation

Cooking timeCooking time: 2 hr 30 mins
  1. STEP 1

    STEP 1

Necessary products. I hope everyone knows how to make potato and cabbage filling.

  2. STEP 2

    STEP 2

Pour milk and water into a saucepan, add salt, soda, butter. Bring to a boil.

  3. STEP 3

    STEP 3

Add about a third of the flour, remove from heat and stir vigorously until the flour boils.

  4. STEP 4

    STEP 4

Cool slightly, pour in the eggs and continue stirring until smooth.

  5. STEP 5

    STEP 5

Then gradually pour in the rest of the flour and knead the dough, first with a spoon, then with your hands.

  6. STEP 6

    STEP 6

The dough should be kneaded for about half an hour. When it stops sticking to your hands and the table, stop kneading. Roll into a ball, place in a bowl, cover and leave on the counter for about an hour. During this time we will just make the filling.

  7. STEP 7

    STEP 7

Well, an hour has passed, the filling is ready and the dough has also rested and risen. We knead the dough one more time, cut it lengthwise into narrow pieces, and roll it into a sausage.

  8. STEP 8

    STEP 8

Cut each sausage into pieces weighing 25 grams. I do this by eye, you can practice and weigh it on a scale. As you can see, you don’t need to add any flour.

  9. STEP 9

    STEP 9

Roll out the pieces into flat cakes approximately three mm thick. Since we will steam the dumplings, the dough should be thin. That is why I make it choux - this dough is very plastic, rolls out well, does not tear and does not “run away”.

  10. STEP 10

    STEP 10

Place a tablespoon of potato filling in the middle of each flatbread.

  11. STEP 11

    STEP 11

cabbage filling. We seal it, preferably with a pigtail.

  12. STEP 12

    STEP 12

These are the dumplings you get. Place them on the board and cover with a towel for now.

  13. STEP 13

    STEP 13

I poured water into the multicooker bowl in advance and added a few pieces of bay leaf to it.

  14. STEP 14

    STEP 14

Turn on the steam cooking mode, 10 minutes, wait for the signal. Meanwhile, grease the steamer with vegetable oil so that the dumplings can be easily removed after cooking.

  15. STEP 15

    STEP 15

Place dumplings in it, leaving some free space.

  16. STEP 16

    STEP 16

Place the steamer on the bowl, close the lid and cook until the end of the mode. Perhaps the Steaming mode works differently in your multicooker. Then wait until the water boils steadily and cook the dumplings for ten minutes. You can cook them directly in water. Bring to a boil, reduce heat and cook after surfacing for five to six minutes, stirring occasionally. Only the dough for such dumplings needs to be rolled out thicker.

  17. STEP 17

    STEP 17

Take the finished dumplings out into a plate, pour over melted butter, sprinkle with chopped green onions and serve with sour cream, mayonnaise and soy sauce.

  18. STEP 18

    STEP 18

    Bon appetit!

Bravo! The smooth dumplings are fantastic!!! Nice photos. Especially those that accompany the recipe step by step. An unhealthy background does not spoil the impression. Nothing superfluous: everything is very concise, harmonious and accessible. I would, of course, change caustic remarks like “I hope everyone knows...”, and maybe I wouldn’t write them at all. We are read by different housewives: including those who want to surprise mom and dad and It’s very possible that they don’t know how to make potato and cabbage stuffing... Don’t be offended... I’m a fan of yours, Irene, when it comes to recipes. You are only attacking us, please don’t attack us painfully..
