STEP 1
How to make soft waffles with kefir in a waffle iron? Prepare the necessary ingredients. Adjust the amount of sugar to your taste. Choose high-quality butter, without milk fat substitutes. Take a large egg, category C0. Beat a chicken egg into a deep bowl, add kefir, sugar and a pinch of salt to improve the taste of future waffles. Mix the ingredients with a whisk until smooth.
STEP 2
Sift premium wheat flour into a bowl. Sifting is extremely important for baking. It gives extra fluffiness to the dough. Add soda and baking powder. Why do you need to add both baking soda and baking powder? It’s simple: the dough will be rich, oily and therefore very heavy. Baking powder alone will not cope with the rise of waffles here, checked.
STEP 3
Mix the dough with a whisk or mixer. If you use a mixer, still mix the flour into the dough with a whisk first, otherwise it will scatter to the sides at high speeds of the mixer. The soda here is quenched with acid from kefir. Therefore, there is no need to extinguish it with anything additional. The dough already comes out with air bubbles inside.
STEP 4
Melt the butter in a microwave oven or in a water bath. Pour the cooled butter into the bowl with the dough.
STEP 5
Mix the dough again. The oil will make it glossy.
STEP 6
Preheat the electric waffle iron according to the instructions. Grease the plates with a drop of sunflower oil and spread the first batch of dough with a tablespoon. Do not add too much to prevent the dough from overflowing the edges.
STEP 7
Fry the waffles for about five minutes until golden brown. The exact time depends on the power and features of your electric waffle iron. I have a 450 W waffle iron. Fry all the waffles in the same way. Bon appetit!
