STEP 1
How to make waffles in a frying pan without a waffle iron? Prepare all the necessary ingredients. I used category C1 eggs, first wash them with food grade detergent to remove all dirt from them. My flour is of the highest grade.
STEP 2
Beat the eggs into a mixing bowl, add sugar and beat the ingredients with a mixer at high speed. The egg mass should become light, and grains of sugar should be practically invisible.
STEP 3
Place the butter in a small saucepan and melt the butter over low heat; the butter should not boil. When the butter is completely melted, remove the pan from the heat and let the butter cool slightly. It should be warm, but not hot. If desired, you can melt the butter in the microwave.
STEP 4
Pour the slightly cooled butter and milk into the egg mixture, season with salt and add vanilla sugar. Beat all ingredients with a mixer for 1 minute. Read the link at the end of the recipe for how to replace vanilla sugar.
STEP 5
Sift the wheat flour through a sieve into a separate container. By sifting, it will be filled with oxygen, which will make the dough more tender and soft, and will also remove unnecessary impurities that may be in wheat flour. STEP 6
Add the sifted flour into the dough in parts, continuing to beat with the mixer at medium speed until the ingredients are completely combined. You may need a little less or more flour, focus on the consistency of the dough. It should become quite thick and have a smooth structure.
STEP 7
The frying pan must be used with a non-stick coating, this will allow the waffles to cook and not burn, since the waffles themselves are fried without adding oil. Using a silicone spatula, tablespoon, or ladle, spread the batter into the pan using quick circular motions. You should get a thin pancake.
STEP 8
Fry the pancake over medium heat on one side for 2-3 minutes, then flip and fry for another 1-2 minutes. Here you should focus on your stove in terms of time. You cannot overdry the waffle, otherwise it will crack when rolled.
STEP 9
Remove the finished waffle from the pan and place it on a wooden board. With quick movements, while the waffle is still hot, roll it into a cone or tube. If you rolled the cone, then place it in a glass for better fixation; if you rolled the tube, then place it seam side down. If you don’t roll the waffle right away, then literally after half a minute you won’t be able to do it; the waffle will harden and break when you try to roll it.
