    How to make a simple and healthy salad from daikon, carrots and apples? First of all, prepare all the necessary ingredients. The quantity of any of the components can be increased or decreased at will. Of course, the taste of the finished salad largely depends on what type of apples you use. If you have sweet and sour varieties, use lemon juice to a minimum.

    Peel the vegetables. Rinse radishes, carrots, herbs and apples under running water and dry with paper towels to remove any remaining water.

    Grate the Japanese radish on a coarse grater and place in a deep bowl.

    Chop the carrots as well and add to the radish.

    Apples can be peeled first; I prefer to leave the skin on as it contains a lot of vitamins. Grate the apple, add to the rest of the ingredients and immediately sprinkle with freshly squeezed lemon juice. Lemon will prevent the apple from darkening and thus the salad will look more appetizing.

    Pour vegetable or olive oil over the salad, add salt to taste if required and add a pinch of allspice or ground black pepper.

    Stir the prepared salad, try to see if there is enough salt, sourness and oil, add the missing component if required. Garnish the salad with fresh chopped herbs. Dill, parsley or green onions are perfect. I also add a few red onions; they decorate the finished dish and harmonize well with daikon, carrots and apples.

    You can grate the salad to make Korean carrots and use frozen herbs instead of fresh herbs.

Unfortunately, I didn’t have green onions, they would have added color to the salad, but even without them it turned out tasty and juicy. I grated the vegetables using a regular grater, which seems a little more tender to me. Thanks for the recipe, Zhemchuzhina.

Interesting taste, pleasant combination and beautiful color scheme. Exactly “my” salad! It was only when I ate it that it dawned on me: I didn’t take daikon, but Margelan radish (and even though they taste similar), I’ll do better next time.

I prepare this salad with great pleasure, it’s spring and I need additional vitamins. This salad will help replenish them; in general, salads made from raw vegetables and fruits are the healthiest. And this one is especially, very juicy, refreshing, incredibly tasty! Sometimes I season it with honey and it turns out to be dessert.
