STEP 1
How to make sandwiches with avocado, red fish and cream cheese? Prepare your food. Any lightly salted red fish will do. You can use any type of bread, baguette, or crispbread as a base. Or you can prepare an assortment and then each guest will make their own choice. Take soft, ripe avocados, such fruits are more oily. If the avocado is very hard, then it is not yet ripe and may taste bitter. I prefer soft creamy curd cheese, without additives.
STEP 2
Cut the fish into thin slices with a sharp knife. Cut the entire width of the fillet or slightly diagonally. The slices can be prepared ahead of time, covered and refrigerated. Or buy a ready-made one, but it usually costs a little more.
STEP 3
Wash and peel the avocado, then cut it lengthwise and remove the pit.
STEP 4
Cut the avocado into pieces, place in a blender bowl and immediately pour in fresh lemon juice to prevent the flesh from darkening. Pulse until chopped into small pieces.
STEP 5
Then add half of the creamy curd cheese to the avocado, perhaps a little salt, chopped herbs, and pickled cucumber if desired. Such additives will enrich the taste and give a visual effect in the form of green pieces and veins.
STEP 6
Grind the ingredients until smooth. Without additives, the cheese paste has a light pistachio tint. You can also prepare the pasta in advance; it keeps well in the refrigerator for up to 2 days.
STEP 7
Prepare sandwiches. Spread a thin layer of light pure cheese on pieces of bread (or other base), step back 1 cm from the edge and apply a mixture of cheese and avocado using a pastry bag, place fish slices on top. Garnish with a sprig of herbs, avocado and cucumber slices. It is good to use caviar, shrimp, olives or capers for decoration.
STEP 8
Do not cut the bread for sandwiches too thick or thin; 1.5 cm will be just right. But you can make any shape and size of the pieces. For a daily table they can be standard; for a holiday table they will look beautiful, small, elegantly decorated and served on a large platter. If you don't have time to decorate your sandwiches, simply spread the cheese mixture on them and place the fish on top.
