STEP 1
How to make a salad with pearl barley? Very simple. To begin, prepare the necessary ingredients according to the list. You can add or replace the vegetable part and spices to your taste. You can replace wine vinegar with apple cider vinegar. Any vegetable oil will do, preferably fragrant, unrefined. I have olive.
STEP 2
Rinse the pearl barley and soak for several hours in cold water. Then drain the water and cook the cereal in boiling salted water according to the instructions on the package. STEP 3
Peel the red onion and cut into thin rings or half rings. Place the onion in a bowl. Pour in wine vinegar. Leave to marinate for 10 minutes. Then drain the marinade.
STEP 4
Peel the bell pepper from seeds and stems and cut into thin rings.
STEP 5
Wash the tomatoes, dry and cut into slices. If you want the salad to be less watery, you can remove the core and seeds. If you have cherry tomatoes, cut them into halves. Tomatoes need to be juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.
STEP 6
Wash the cucumbers, dry and cut into semicircles. The peel, if it is not rough, damaged or bitter, does not need to be cut off.
STEP 7

STEP 8
In a salad bowl, combine tomatoes, cucumbers, bell peppers, olives, red onions, pearl barley and feta. Drizzle the salad with olive oil and lemon juice, sprinkle with oregano, salt and pepper and toss gently.
