STEP 1

How to make salmon and broccoli quiche? Prepare your food. First for the test. Cool the butter well before cooking, you can even put it in the freezer for half an hour. Use high-quality, natural oil, without vegetable additives. Cool the water too. This quantity of products is designed for a 25cm pan, I cooked in a 20cm pan, and calculated the ingredients based on this.
STEP 2

Add salt and sugar to flour. Stir. Add cold butter. Using a knife, chop the flour and butter until crumbly.
STEP 3

Then, pour in ice water one spoon at a time and quickly knead the dough. When the dough comes together into a ball, stop kneading - the heat from your hands may cause the butter to melt, which will make the dough tough when baking. Therefore, we must act quickly. Wrap the dough in a bag or film and put it in the refrigerator for 30 minutes.
STEP 4

After half an hour, take out the dough and roll it out into a layer about 5mm thick. Also focus on the size of the mold - the dough should cover the bottom and sides. It is convenient to roll it out immediately on a sheet of parchment; it will come in handy later when baking.
STEP 5

Transfer the dough to the pan and use your fingers to form the edges. I have a round one, 20cm in diameter. Cut off excess dough with a knife.
STEP 6

Place a piece of parchment paper on top of the dough on which it was rolled out and add a load (peas, beans or special balls). Place the pan with the dough in the oven, preheated to 180°C, for 7 minutes.
STEP 7

Then take out the mold, remove the weight, and prick the dough with a fork. Return pan to oven for 5 minutes.
STEP 8

Meanwhile, prepare the filling. Prepare food for her. You can take any red fish - salmon, chum salmon, pink salmon. Broccoli is suitable either fresh or frozen. There is no need to defrost it first.
STEP 9

Cut the fish into small cubes, first cutting it into fillets. Remove the bones.
STEP 10

Boil water in a saucepan and salt it. Place the cabbage in boiling water and simmer over low heat for a couple of minutes. Then place the cabbage in a sieve.
STEP 11

Also cut the broccoli into small pieces.
STEP 12

Grate the cheese on a coarse grater. Any cheese is suitable for this dish - hard, semi-hard, soft, such as mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well.
STEP 13

Beat eggs into sour cream, add salt and pepper. Stir with a fork until smooth.
STEP 14

Place the fish, cabbage and cheese in a bowl, pour the sour cream mixture into it. Stir.
STEP 15

Remove the pie crust and do not turn off the oven.
STEP 16

Place the filling on the dough and smooth it out.
STEP 17

Place the pie in the oven and bake for about 30 minutes. The exact time will depend on your oven and the thickness of the quiche. The top should turn golden. Remove the finished quiche from the oven.

Cool it a little, remove it from the mold and serve. Bon appetit!
