    Heat the frying pan, pour in vegetable oil and add the potatoes. Again, potatoes can be fried in two ways: with or without a lid over high heat. I prefer the option without a lid. In this case, the potatoes turn out crispier and crispier. Under the lid it looks more like boiled-stewed, which I don’t like at all. Salt and add spices.

I love fried potatoes! I use this recipe to cook potatoes with mushrooms, but I never thought of using eggplants! I cooked it, it turned out delicious, but I fried the eggplants separately, I always do this with mushrooms, and when both the potatoes and eggplants were almost ready, I combined everything :) at the very end I added 2 cloves of garlic, it turned out very fragrant
