Wash the potatoes, peel and cut into slices.

Cut the eggplants into slices.
STEP 4
Heat the frying pan, pour in vegetable oil and add the potatoes. Again, potatoes can be fried in two ways: with or without a lid over high heat. I prefer the option without a lid. In this case, the potatoes turn out crispier and crispier. Under the lid it looks more like boiled-stewed, which I don’t like at all. Salt and add spices.
STEP 5
Separately fry the eggplants.
STEP 6
Not completely, just like in the photo.
STEP 7
Mix potatoes and eggplants. Towards the end of cooking, add spices and salt. If desired, you can add chopped garlic.
STEP 8
Ready-made potatoes with eggplant are most delicious when they are still hot. After cooling and subsequent heating, the taste changes completely.
