There must be a stalk on the eggplant! Some people remove the cutting to disguise the “age”. It should be fresh, green and not wrinkled. You should take medium and not large sized eggplants. Avoid any scratches, cuts, stains or dents.
Interesting recipe: 1. Cut the stem from the eggplant. Wash thoroughly.2. Cut the fruit into fairly thin slices.3. Add salt and leave for half an hour.4. Drain the liquid. Dry the eggplant slices a little.5. Heat a frying pan with oil over medium heat. Fry the slices on both sides. Remove excess fat.6.
