Eggplants with garlic without sterilization

STEP 1
How to make fried eggplants for the winter with garlic without sterilization? Prepare your food. It’s best to prepare this appetizer in early autumn, when there are a lot of small, firm eggplants on sale. The skin of such fruits should be matte, not glossy. They should also be elastic to the touch and small in size. You can take any vegetable oil: refined or not. If you like aromatic oils, then you can take aromatic sunflower and olive oil.
STEP 2
Wash the eggplants well, preferably using a special brush and vegetable washing liquid. Cut lengthwise into thin slices about 3 mm thick. I love thin slices of eggplant - they are crispier when fried.
STEP 3
Place the chopped eggplants in a deep bowl and salt them.
STEP 4
Place a lid or plate and some weight on top. I put a three-liter jar of cucumbers.
STEP 5
Leave the eggplants under the load for 6 hours, or overnight. Look how much liquid they released. Thanks to this procedure, we will remove the bitterness from eggplants.
STEP 6
Prepare the jars in which you will seal the eggplants. Wash the jars well with baking soda and sterilize. You can do this in the microwave or oven. I put a spoon in each jar to prevent it from bursting and pour boiling water over it. I leave it in the microwave for 5 minutes, then drain the water. Boil the lids for about 5 minutes.
STEP 7
Drain off the liquid released by the eggplants. Dry them with paper towels. Heat the oil in a frying pan and fry the eggplant slices in sections for 2-3 minutes on each side. Place the fried eggplants immediately into a sterilized jar, pressing tightly.
STEP 8
Fill the jar with fried eggplant. Place 1-2 cloves of garlic, cut in half, on top. If the oil does not reach the shoulders of the jar, boil vegetable oil and add it to the jar. I immediately close the jar with screw caps, but you can also roll it up using a machine. Sterilization is not required. I store this preparation in a cool place, preferably in the basement or in the refrigerator.
STEP 9
If you do not have the opportunity to store jars in the refrigerator, then add a teaspoon of 9% vinegar directly to the jar and then roll it up. Now store it safely in an apartment. Opening such a jar in winter is simply finger-licking! Bon appetit!
