I had cherry tomatoes and used them, cutting them into quarters. The eggplant was not soaked in salt water. I got six rolls. The appetizer is very tasty, with a bright taste and pleasant piquancy. Thanks for the recipe. These eggplants are ideal both as a snack and for a light dinner. I didn’t have any greens, but I sprinkled them with lightly toasted sesame seeds. And I warmed them up a little in the microwave so that the cheese would melt.
