STEP 1
How to make spicy eggplants as a winter snack? Prepare all the necessary products. Choose small eggplants with thick, matte skin - these are the most delicious ground fruits. Peppers are also best when they are in season. It’s good if some of the peppers are red, they will add color to the pepper sauce and the preparation as a whole. STEP 2
Wash the eggplants, cut off the stem and “butt”, cut into circles about 5 mm thick.
STEP 3
Add salt and leave for about 20 minutes. This way the eggplants will be salted and give off their bitterness.
STEP 4
While the eggplants are salting, prepare the pepper sauce. Pinch the stems of the hot peppers and leave the seeds. Remove the stems and seeds from the sweet pepper. Peel the garlic. Chop both types of pepper as desired.
STEP 5
Place the garlic and chopped peppers in a blender bowl.
STEP 6
Grind until smooth. You can also mince vegetables.
STEP 7
Add salt, sugar.
STEP 8
Pour in vinegar. This recipe uses 6-9% vinegar, so if you have essence, dilute it in a ratio of 1:8.

Add a little boiled cold water to make the consistency of the sauce thinner.
STEP 10
Heat vegetable oil in a frying pan and fry the eggplants until golden brown. This is usually 5 minutes on each side over medium heat.
STEP 11
Sterilize the jars in any convenient way. I pour a little water into each jar and put it in the microwave for 5-7 minutes. But you can sterilize the jars in the oven at 100 degrees for about 30 minutes, or simply scald them or hold them over steam. It is enough to boil the lids for 5 minutes. STEP 12
Dip each eggplant slice into the pepper sauce.
STEP 13
And place it tightly in the jar.
STEP 14
Pour the remaining pepper sauce on top. Close the jars tightly with lids. No sterilization required. You can store this product without a refrigerator.
