I decided to make eggplant rolls with tomatoes and garlic. Peeled the eggplant, cut into thin slices, added salt to remove bitterness and left for 15 minutes. Then I rinsed them, patted them with a towel to remove excess moisture and fried them in a frying pan with vegetable oil on both sides. Place the fried eggplant strips on a paper towel to absorb excess fat. Mayonnaise mixed with chopped garlic, mustard and parsley. I smeared slices of fried eggplant with the resulting sauce, placed a sprig of herbs on each small block of tomato (in addition to parsley, I also used dill), and rolled them up. I also cook rolls like this, but I don’t fry the eggplants, but bake these plastic rolls a little in the oven on a greased sheet. And to the filling, to the mayonnaise, I add crushed walnuts.
