    How to fry eggplants like mushrooms? Prepare all the ingredients needed for the recipe. You can peel the eggplants first; I usually don’t do this and cook the little blue ones as they are.

    Cut the eggplants into small cubes. If you have a blue variety that tastes bitter, then soak the cubes in salt water for 15-20 minutes. Then drain the water and dry the eggplants.

    Wash and dry the eggs. Place them in a deep small container and beat with a whisk or fork until smooth.

    Place the eggplants in a deep, suitable-sized bowl. Pour in the egg mixture and mix well. Each piece should be covered with egg wash. Cover the bowl with cling film or a lid and place in the refrigerator for 30-60 minutes.

    Peel the onion and garlic, rinse and dry with paper towels. Cut the onion into small cubes, and pass the garlic through a press or chop it with a knife.

    Heat refined vegetable oil in a thick-bottomed frying pan. Sauté the onion and garlic until transparent.

    Place the eggplants in the frying pan. Mix everything, reduce the stove flame to moderate and cook the blue ones under the lid until done. This usually takes from 20 to 30 minutes (depending on the size of the pieces). Open the lid periodically and stir the contents of the pan.

    At the end of cooking, salt the blue ones to taste. Pepper if desired. Turn the heat to maximum and, stirring constantly, cook until an appetizing golden brown crust appears (1-3 minutes will be enough).

    Sprinkle the finished dish with finely chopped fresh herbs. Green onions, parsley or dill work well. Done, ready to serve!

The dish is inexpensive and simple, my husband liked it, the main thing is) I even took more onions, and the eggplant was sooooo big. It turned out to be very quick to cook, just casual. Eggplant pieces are fried in the same way as mushrooms. It looks and tastes like forest champignons. They are porous, elastic and delicious. An excellent dish during the fresh vegetable season. And if you freeze the eggplant cubes, then you can fry vegetable “mushrooms” in winter) By the way, I would recommend mushroom seasoning or some dried ground mushrooms for this dish, it will be even tastier and more aromatic.

This is the second recipe I try to cook, where eggplants are like mushrooms. This one is simpler and faster, but at the same time not inferior to my previous experience. Advice: do not skimp on onions, they play a very important role. Thanks for the simple recipe

The snack is truly versatile. Delicious both cold and hot. Good both as a side dish and as an independent dish. The porous pulp of eggplants is very similar in structure to mushroom stems. To add aroma and enhance the taste, I added a little garlic and dill. I didn’t dare add green onions; in my opinion, they would overwhelm the taste of the eggplants. For a richer taste, it is better to let the eggplants sit for a while after cooking. Have fun cooking this simple and very tasty recipe, I recommend it!
