Current varieties of eggplant are practically not bitter and can be cooked immediately. If you are sensitive to bitterness in eggplants, you can soak the sliced ​​mugs for 10 minutes in salted water.

I prepared eggplants in batter fried in a frying pan. I cut the eggplant into thin slices (up to 0.5 cm), but still decided to add some salt to make sure that there would be no bitterness. After 10 minutes, I squeezed out the eggplants. I used wheat flour for the batter; I didn’t add any salt to it; the eggplants were already salted. It’s not always the right time to add garlic, and the smell of garlic sometimes gets in the way if you go to the theater after dinner, for example, or you’ve been invited to visit. Chili peppers add quite a bit of spiciness to the dish, in my opinion. But if you don’t plan to “go out into society,” then add garlic, just for your health! It really brings out the flavor of the eggplant very well.
