STEP 1

How to fry eggplants in batter in a frying pan? Prepare all the necessary ingredients. It is best to take seasonal domestic ground eggplants. Take not very large specimens - we will cut the eggplant into circles and they should not be very large in size. The oil can be any vegetable oil: from sunflower to sesame. Also flour: I use wheat, but it can be any other. For example, rice will come in very handy here.
STEP 2

Place the flour in a plate or other convenient container and mix with salt until smooth.
STEP 3

Break the egg into a bowl and beat with a fork. Wash the egg first in running water and soda, as there may be harmful bacteria on its surface.
STEP 4

Wash the eggplant, dry it, cut off the stem and cut into circles 3-5 mm thick. I would like to note that previously eggplants were soaked in salt water to remove bitterness. Current varieties of eggplant are practically not bitter and can be cooked immediately. If you are sensitive to bitterness in eggplants, you can soak the sliced mugs for 10 minutes in salted water.
STEP 5

Dip each eggplant slice into the egg.
STEP 6

Then roll in flour. For a thicker batter, you can dip it in the egg again and bread it in flour again.
STEP 7

Heat the oil in a frying pan, add the eggplant mugs and fry over medium heat for 5-7 minutes on each side until golden brown and crispy. STEP 8

I sprinkled the prepared crispy eggplants in egg batter with chopped garlic, this is optional. You can also sprinkle them with chopped herbs. I would like to note that they are delicious both hot and cold.
