STEP 1
How to make potato zrazy with minced meat? Prepare the necessary products. You can use any minced meat: chicken or meat. I have a mixed one (pork, beef). The juicier the minced meat, the tastier the zrazy will be.
STEP 2
Peel the potatoes, pre-washed in water with a brush. Cut each tuber into 2-4 parts depending on its size. Boil water in a suitable sized saucepan, add the prepared potatoes, and bring to a boil. Salt the potatoes and cook over moderate heat until tender. It is important not to overcook the potatoes. Otherwise, it will lose some of the starch and absorb water. Then the potato dough will be more wet and making zrazy will not be very convenient.
STEP 3
While the potatoes are cooking, prepare the filling. Peel and wash the onions. Cut the onion into small cubes.
STEP 4
In a frying pan with vegetable oil, fry the onion, stirring occasionally, until soft. Make the heat moderate so that the onion does not burn.
STEP 5
Place the minced meat in the pan with the onions. Fry the minced meat with onions, stirring vigorously. Knead the meat lumps so that the minced meat becomes more homogeneous.
STEP 6
Fry the minced meat until it changes color. At the end of cooking, salt the minced meat, add spices to taste, and stir. Cook for another 1-2 minutes. Let the filling cool.
STEP 7
Drain all the water from the finished potatoes. Mash the hot potatoes with a potato masher into a homogeneous puree, cool.
STEP 8
To help the mashed potatoes cool faster, you can transfer them to a suitable sized bowl. The puree should be slightly warm, not hot, so that the added egg does not curdle.
STEP 9
Beat the egg into the mashed potatoes and stir.
STEP 10
Add flour, mix well.
STEP 11
The result is a soft, homogeneous potato dough. It will be a little sticky, so when forming the zraz, dust your hands with flour or grease with vegetable oil.
STEP 12
How to make zrazy? Form a portion of dough into a thin flat cake and place it on a surface sprinkled with flour. Make a well in the center of the cake.
STEP 13
Fill the middle of the tortilla with the filling.
STEP 14
Bring the edges of the dough together. Blind the zrazy like a pie, giving it an oblong shape.
STEP 15
Form the remaining zrazy in the same way. Place the zrazy on a baking sheet greased with vegetable oil. I lined the bottom with foil, but this is optional.
STEP 16
In a small bowl, beat the egg with a fork until smooth.
STEP 17
Using a pastry brush, brush the tops of the zrazy with beaten egg so that they get a beautiful blush when baked.
STEP 18
Bake the zrazy in an oven preheated to 180C for 20-25 minutes until browned. Determine the time and temperature based on your oven.
STEP 19
Serve the potato zrazy hot as a separate dish. Bon appetit!
