STEP 1
How to fry potato pancakes in a frying pan with an egg? Prepare your food. The amount of potatoes will depend on their size. This recipe is for 4 large or 6 medium potatoes. If you don’t like it, you don’t have to add onion, but it will help prevent the potato mass from darkening.
STEP 2
Rinse the potatoes well under running water with a brush. Then peel it. Grate the tubers on the finest grater, the one that grinds the food practically into a puree. This method is the most authentic; grating on a medium or coarse grater will make the potato pancakes more textured. But you can grate it on any - it will still turn out delicious. Drain off the excess liquid that comes out after grating the potatoes - it will make the dough too liquid.
STEP 3
Also grate half of a small onion. Add salt and pepper to taste. Beat in the egg. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 4
Add flour. Flour will help to “fasten” the dough well so that the pancakes are more stable. Adjust its quantity depending on the consistency of the dough. It should turn out like thick sour cream.
STEP 5
Mix the potato mixture well. Leave it to stand for 10 minutes so that the flour absorbs more liquid. After standing, the dough will begin to separate a little, no problem, stir it and it will become homogeneous again.
STEP 6
Heat a heavy-bottomed frying pan over high heat. Pour in vegetable oil. Spoon the dough into the hot oil, forming round pancakes. Do not make them very thick so that the potatoes are thoroughly fried.
STEP 7
Fry pancakes until golden brown over medium heat, then turn over and cook the other side. Remove the finished pancakes to a plate; you can place a paper towel on it to absorb excess fat. Fry pancakes from the entire dough in this way. Add vegetable oil as needed. (I added after two batches, then after two more).
STEP 8
Serve pancakes hot with sour cream. Bon appetit!
