    How to bake pollock in the oven with mayonnaise and onions? Very simple and fast! To begin, prepare the necessary ingredients according to the list. Instead of whole fish, you can use frozen fillets pressed into briquettes. They will need to be defrosted first on the bottom shelf of the refrigerator and all the water drained.

    Clean the fish from the insides, remove the fins and rinse well. Cut into portions.

    Place the prepared pollock in a bowl, sprinkle with fish seasonings, salt and pepper. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often, such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish. You don’t have to add seasoning for fish at all, but it makes it more aromatic and tastier.

    Mix everything well so that all the pieces are coated with spices. Leave the pollock to marinate for 15 minutes.

    While the fish is marinating, prepare the sauce. Peel the onion and cut into small cubes. Heat vegetable oil in a frying pan and, stirring, fry the onion until golden brown.

    In a bowl, combine mayonnaise, fried onions, lemon juice and, if desired, lemon zest. Mix everything thoroughly.

    Place the pollock pieces into a baking dish greased with vegetable oil. Spread the onion-mayonnaise mixture on top. Place the fish in an oven preheated to 180°C for 25-30 minutes. The exact time depends on your oven and the size of the fish pieces. The mayonnaise sauce on top should be slightly browned, but not burnt.
