STEP 1
How to make pizza with pear and gorgonzola like in a pizzeria? Very simple. To begin, prepare the necessary ingredients according to the list. Take premium flour. Oil - any vegetable oil. I have olive.

Dissolve salt and yeast in warm water heated to a temperature of 37-40°C. Leave in a warm place for 10-15 minutes until a fluffy cap appears. If a cap appears, then the yeast is active and you can continue working with it.

Sift the flour into a bowl and make a well.
STEP 4
Pour the yeast mixture and olive oil into the flour.
STEP 5
Knead into a smooth, homogeneous elastic dough. If necessary, you can add a little more flour, but do not rush to fill the dough with flour, otherwise it will turn out rubbery, tough and tasteless.

Cover the dough with a towel and leave in a warm place to rise for 1 hour. 30 minutes after the start of rising, knead the dough and leave to rise further.
STEP 7
Now prepare the filling. It's enough for two pizzas. You don't have to add mozzarella at all. You can use mozzarella for pizza or regular pickled mozzarella. You can replace pine nuts with other nuts to taste. It is better to use liquid honey. If the honey is candied, melt it first. Wash and dry the arugula.

Cut the mozzarella into thin slices.
STEP 9
Grate Parmesan on a fine grater. I used already grated store-bought cheese.
STEP 10
Break the Gorgonzola into small pieces with your hands.
STEP 11
Wash the pear, cut it in half lengthwise and remove the core. Cut each half into slices. The pears should not be very hard so that they have time to bake. You can cut off the skin of the fruit if you wish. It is better to prepare the pears in advance so that they do not darken.
STEP 12
Divide the finished dough in half. Enough for two large pizzas. Roll out each part on floured parchment into a circle with a diameter of 28-30 cm.
STEP 13
Transfer the parchment with the dough onto a baking sheet. Brush the top of the dough with olive oil. Scatter mozzarella slices on top.
STEP 14
Place pear slices on top of the mozzarella.
STEP 15
Next, scatter the Gorgonzola pieces and sprinkle the pizza with grated Parmesan and pine nuts. Form the second pizza in the same way. If you only need one pizza, use only half of all the ingredients.
STEP 16
Bake the pizzas in an oven preheated to 220°C for 20-25 minutes. The exact time depends on your oven. It is important to ensure that the bottom of the pizza does not burn.
STEP 17
Remove the finished pizza from the oven, immediately pour liquid honey over it and sprinkle with arugula. Bon appetit!
