STEP 1
How to make a pie with cottage cheese and cherries? Start with the butter dough. Remove the butter from the refrigerator in advance; it should become soft. Choose it of the best quality, complying with GOST.
STEP 2
Beat soft butter with sugar until fluffy. Do not beat for too long, the butter may begin to separate. Three minutes will be enough.
STEP 3
Continuing to beat, add eggs one at a time, mixing well after each. Wash the eggs with baking soda first to remove all dirt.
STEP 4

You should get a soft sticky dough. The butter dough is ready.
STEP 6
Next prepare the curd dough. Take thicker cottage cheese, from 5% fat content and above, preferably not dry so that there are no lumps. If you only have dry, then add a little sour cream to it. STEP 7
First rub the cottage cheese through a sieve or beat with an immersion blender into a homogeneous mass. Combine cottage cheese with sugar, vanilla sugar and eggs.
STEP 8
Mix everything thoroughly until smooth. You can use a mixer, or you can use a regular whisk. The curd dough is ready.
STEP 9
Prepare the filling. If the cherries are fresh, remove the pits and drain the juice. If frozen, use it without defrosting. I have frozen berries. Instead of corn starch, you can use potato starch.

Combine cherries with cornstarch and stir. The filling is ready.
STEP 11
All that remains is to assemble the pie. Place the butter dough in a baking dish (mine is 20 cm in diameter) and smooth it out.

Pour cottage cheese on top of the butter dough.

Cool the finished pie, remove from the mold, sprinkle with powdered sugar and cut into pieces. When the pie is still hot, the cottage cheese in the middle may tremble a little. This is fine. As the pie cools, the curd will become denser.
