I have long wanted to bake a pie with cottage cheese and cherries, I really like this combination. Usually such pies come with a shortbread base, and I don’t really like shortbread cakes) And this recipe combines everything that I like! I kneaded the dough for the base in the same way as indicated in the description. I had the butter frozen, and in order not to wait too long, I defrosted it in the microwave. To do this, I cut it into small pieces, put it in the microwave and set the “fruit defrosting” mode to 300 g. As a result, perfectly soft and absolutely not liquid butter is ready) The finished dough turned out to look like a good butter cream, it looks very appetizing)) For the curd layer, all products I beat it with an immersion blender, using small eggs so that the filling does not turn out liquid. There weren’t many cherries, I literally removed the last one from the tree and added a handful of red currants. Lightly sprinkle starch mixed with powdered sugar on top. I baked the pie for 55 minutes because I doubled the portion of ingredients. My pie came out big, enough for all the guests) Before serving, I cooled it in the refrigerator, I think this improves the taste of the curd pastry.
