  1. STEP 1

    STEP 1

How to make yeast pie with apples and lingonberries? Prepare the necessary ingredients for this. Sift the flour for the dough through a sieve in advance to saturate it with oxygen. This will make the finished products fluffier, and the dough will fit better. For the filling, choose sweet or sweet and sour apples.

  2. STEP 2

    STEP 2

Finely break the yeast into a large bowl.

  3. STEP 3

    STEP 3

Then mix them with warm milk. The milk should be just warm, not scalding. If milk is too hot, the yeast will die. Add sugar and 100 grams of flour from the total amount. Mix everything until smooth and leave to stand in a warm place for 20-30 minutes. Bubbles will appear on the surface. This means that the yeast has begun its work.

  4. STEP 4

    STEP 4

Next, add the egg and melted butter (not hot!) to the bowl. Gradually add the remaining flour and knead the dough. First wash the egg in warm water and soda.

  5. STEP 5

    STEP 5

You may need a little more or less flour than indicated in the recipe. Focus on the consistency of the finished dough. It turns out soft, plastic and almost does not stick to your hands.

  6. STEP 6

    STEP 6

Place the dough in ice water for about 30 minutes. The dough should float. The yeast will begin its work and due to the release of carbon dioxide, the dough will begin to float.

  7. STEP 7

    STEP 7

At this time, start preparing the filling. Wash the apples in running water, dry, peel, seeds and cut into cubes.

  8. STEP 8

    STEP 8

Mix apples with lingonberries, sugar and starch. There is no need to defrost frozen lingonberries in advance.

  9. STEP 9

    STEP 9

Remove the dough from the water and dry with paper towels. Then knead with a small amount of flour.

  10. STEP 10

    STEP 10

Divide the dough into 2 unequal parts.

  11. STEP 11

    STEP 11

Roll out most of it and distribute it over the bottom and sides of the mold (24 cm). The mold can be greased with vegetable oil or lined with cooking paper.

  12. STEP 12

    STEP 12

Use a smaller portion of the dough to make a pie decoration.

  13. STEP 13

    STEP 13

Brush the top of the pie with egg yolk and place in the oven, preheated to 180 degrees, bake for about 25-30 minutes. Time and temperature are approximate, be guided by the operating characteristics of your oven.

  14. STEP 14

    STEP 14

The finished pie will increase slightly in size and become an appetizing golden color. Remove it from the oven and cool completely. The pie filling should cool completely and become stable. I left the pie for the next morning. Enjoy your treat!

For tea I decided to make a pie with apples and lingonberries. I kneaded the dough according to the recipe. For the first time, I left the dough to rise in ice water and was even a little afraid that it wouldn’t work out, but surprisingly the dough floated up, as the author wrote, and increased in volume by 1.5 times - so choose the appropriate utensils. Next, I dried the dough with a towel and kneaded it in a small amount of flour . The dough came out very flexible and soft. For the filling I had apples and currants, which I mixed with sugar and starch. The next time I cook, I will defrost the berries and salt the excess water from them, because... For me, the filling was a bit runny, so if you like a thicker filling, take note. The pie itself exceeded all expectations! Soft, airy, porous dough and a bright sweet and sour filling - just what you need for tea! I advise everyone to prepare it! Thanks to the author for the recipe
