    How to make pancakes in the oven? Prepare your food. The pancakes will be more fluffy if the ingredients are at room temperature, so remove the kefir and eggs from the refrigerator in advance.     Beat the eggs into a bowl, add sugar and salt. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.

    Beat the eggs with a fork until smooth. Pour kefir into them, leaving a small amount, you will need it later. Mix eggs with kefir. It is not necessary to use a mixer; a fork will suffice.

    Sift flour into a bowl with liquid ingredients. By doing this you will not only remove possible debris, but also saturate it with oxygen, which will make the pancakes fluffier and softer.

    Stir the dough by stirring in the flour. It should turn out thick, like pancakes, even a little thicker. Adjust the amount of flour, you can add more if necessary. Then pour vegetable oil into the dough and mix.

    Pour baking powder into the reserved kefir and stir. The kefir will immediately bubble - a reaction will begin between the acid and alkali contained in the baking powder. It is due to this reaction that the dough will rise, since carbon dioxide will be released as a result. Pour the resulting mass into the dough and gently mix it in.     There is no need to touch the dough anymore so that it does not settle.

    Turn on the oven to preheat at 200°C. Cover a baking sheet with parchment. Spoon the dough into small pancakes. You won’t be able to fit all the dough at once, so bake in batches.

    Place the baking sheet in the preheated oven. Bake the pancakes for 15-20 minutes until they rise and brown. Remove the finished pancakes from the baking sheet and immediately bake the next batch. From this amount of dough I made two batches, 18 pieces in total. Pancakes are one of my family's favorite breakfast foods. I cook them quite often. But this was my first time making pancakes in the oven. I mixed twice as much dough, for eight servings. I did everything according to the recipe. Before adding kefir and baking powder, the dough turned out to be quite thick, thicker than what I get for regular pancakes. But apparently, I left too much kefir for diluting the baking powder. So after adding it, the dough was no longer so thick. I didn't add any more flour. I decided to bake pancakes from what I got. The first batch didn’t quite work out for me, because the pancakes were stuck to the parchment and couldn’t be removed from it. Apparently due to insufficient thickness. I decided to bake the second batch directly on a baking sheet greased with vegetable oil. The second time everything worked out well. Only the pancakes didn’t turn out fluffy. But their taste is wonderful: delicate, light. The kids loved it on both cheeks.katushafin, thank you very much for the recipe!

Is it possible to add yogurt, fermented baked milk, or any fermented milk product instead of kefir?
