Ossetian pies with green onions
Ossetian pies are incredibly tasty, you can come up with the filling! I have been looking for the recipe for these particular pies for many years. A low bow to the wonderful chef G. Saidov and his website “Bukhara Quarter of St. Petersburg”.
The whole secret of these pies is in the dough. The dough turns out to be liquid, it cannot be cut with a knife, but must be “scooped” with your hand. It feels oily, airy, almost weightless. Working with this test is a pleasure. If the pie turns out to be thicker than 1.5 cm, then it is no longer Ossetian, but just a pie.

Thank you for the original recipe for making Ossetian pie. I had never worked with yeast dough before, and I wasn’t too afraid that it wouldn’t work out. The pie turned out very wonderful the first time, both in appearance and taste. The only thing I made my own was the filling; instead of green onions, I added fried porcini mushrooms with shallots.

I bought one of them in St. Petersburg, very tasty, but also expensive, of course, I’ll have to cook it myself according to Larisa’s recipe. The pies are excellent and satisfying, a wonderful recipe! And not difficult)))

I came across a recipe, I really want to try it, but I have a question - how many eggs should I put in the dough? The recipe calls for 1 egg, but the photo shows 2 yolks. So how much is it really? Please tell me
