You can use regular cottage cheese or grainy cottage cheese like mine. Finely chopped chili peppers, which can be replaced with sweet Bulgarian ones, will add piquancy to the omelet. Choose spices to your taste, I took paprika and curry.

    Wash and dry the greens. Chop it finely with a knife. You can take any one you like or have in stock.

    Finely chop the chili pepper (if you decide to add it). To make it less hot, remove the seeds.

    Wash the eggs well, crack them into a bowl and beat with a whisk or fork until smooth. Add herbs, chili, spices and salt to the eggs. Stir.

I’ve never made an omelette with cottage cheese, but the recipe intrigued me) I took the same amount of ingredients; one was just enough for me for a hearty protein breakfast. I added one sausage of my own, which I chopped finely. I didn't add chili. The cottage cheese was just grainy, literally separate grains) I also decided to fry the omelette in a wide frying pan to make something like a thin pizza. Five minutes on low heat was enough. I was very pleased with the omelette with its unusual taste and bright appearance. The cottage cheese has become similar in consistency to feta cheese. It is very tasty, and the spices give this dish an incredible aroma. I’ll probably introduce this omelet into my family’s diet. Tasty, interesting and healthy!
