Mushroom soup with meat and potatoes
Ingredients
Step-by-step preparation
STEP 1
How to cook mushroom soup with meat and potatoes? Prepare the necessary ingredients. What meat can you take besides pork? Any. Beef, lamb, chicken or turkey will do. But keep in mind that the calorie content and cooking time of the dish will change. You can add vegetables and spices to your taste.
STEP 2
Cut the pork and bacon into small cubes.
STEP 3
Wash the potatoes with a brush in running water, peel and cut into slices.
STEP 4
Wash the mushrooms and cut into slices. If possible, choose young and fresh champignons. In addition to champignons, you can use any other mushrooms to taste. But they may have to be boiled first, especially if they are fresh wild mushrooms.
STEP 5
Wash the bell pepper in running water, dry, remove seeds and stems and cut into cubes.
STEP 6
Cut the pickled cucumbers into cubes. You can replace the pickled cucumbers with pickled ones.
STEP 7
Peel the onion, cut into half rings or small cubes, as you like.
STEP 8
Heat some vegetable oil in a frying pan over high heat. Add the pork and fry, stirring, for 8-10 minutes until golden brown. While the meat is roasting, boil water in a saucepan. Place the fried pork in it. You can learn how to choose the right frying pan and soup pot from the articles, the link to which is at the end of this recipe under the steps.
STEP 9
Add bacon to the pan and fry for 5 minutes to render excess fat. Also transfer the fried bacon to the pan.
STEP 10
Also add bay leaves and allspice to the pan. Bring to a boil and simmer covered for about 30 minutes.
STEP 11
Heat the remaining vegetable oil in a frying pan over medium heat. Add the onion and fry until transparent.
STEP 12
Add mushrooms, potatoes, and garlic to the pan. Fry, stirring, 5-7 minutes.
STEP 13
Add tomato paste to the vegetables in the pan and fry, stirring, for another 2-3 minutes. Tomato paste in this recipe can be replaced with tomatoes in their own juice, fresh tomatoes or ketchup.
STEP 14
Place fried vegetables, bell peppers, pickled cucumbers, marjoram, paprika, ground pepper and salt into a saucepan.
STEP 15
Simmer the soup, covered, for about 15 minutes or longer until the meat and vegetables are cooked through.
STEP 16
Pour the finished soup with champignons, meat and potatoes into bowls and serve, garnished with fresh herbs. Bon appetit!
