STEP 1

How to make a miracle with greens? First of all, knead the dough. To do this, sift the flour into a deep bowl, add salt, mix, make a small depression and pour room temperature kefir into it. Gently adding flour from the edges, knead the dough, it should turn out soft and elastic. Keep in mind that flour comes in different densities and it may take a little more or less than what is indicated in the recipe.
STEP 2

Gather the dough into a ball and set it aside for half an hour. During this time, the flour will finally absorb all the liquid, gluten will develop in it, which is responsible for the elasticity of the dough.
STEP 3

In the meantime, you can start filling. Rinse the greens and dry on paper towels. The greens can be whatever you like or whatever you have on hand. For me it’s green onions, parsley, cilantro, dill. Sorrel, spinach, chard, and wild garlic are also good options.
STEP 4

Cut the green onions into two parts - finely chop the feathers along with the rest of the greens, and finely chop the white part of the onion and fry in a frying pan with a little oil.
STEP 5

Place the chopped greens in a bowl, break 3 eggs into it, add cottage cheese and fried onions, add salt and mix.
STEP 6

Divide the dough into 4 parts, form a ball from each and roll into a very thin cake with a diameter of 20-22 cm (guide by the size of your frying pan, I got four cakes with a diameter of 22 centimeters). To prevent the dough from sticking, dust your rolling pin and countertop with flour.
STEP 7

Place a quarter of the filling on one half, retreating a centimeter and a half from the edge.
STEP 8

Cover the filling with the second part of the tortilla and pinch the edges. Do this carefully so that the thin dough does not tear.
STEP 9

Grease a frying pan with a small amount of frying oil, heat it up and fry the miracle in it for about three minutes on each side. Grease the finished miracles with butter and cut into portions. Bon appetit!
