STEP 1
How to make minced meat cutlets in the oven with gravy? Prepare all the necessary ingredients.
STEP 2
Take a loaf of bread, break it into pieces, put it in a bowl and cover with cold water, leave for 10 minutes. You need to fill it with cold water so that the bun becomes soft, but retains its structure. Hot water boils it and turns into porridge. Instead of a roll, you can use white bread, but then cut off all the hard crusts.
STEP 3
Squeeze the loaf lightly and place it in the blender bowl. Peel the onions, rinse and cut with a knife, add to the bun. Beat everything until smooth. Instead of a blender, you can pass everything through a meat grinder with a fine grid.
STEP 4
Place the minced meat in a bowl and beat in the egg. It is best to take homemade minced meat from pork and beef in equal proportions. Minced pork and chicken are also perfect. Wash the egg with baking soda first, as there may be harmful bacteria on its surface.

Add chopped bread and onions to the bowl with minced meat.
STEP 6
Salt, pepper and add paprika. If you don't have it or don't like it, just don't add it. If you wish, you can add any other spices to the minced meat to your taste.

Mix everything well and beat until the minced meat is compact and elastic. To do this, lift the minced meat above the bowl and throw it back. Do this about 10-15 times.
STEP 8
Pour flour into a bowl. It can be of absolutely any type, the main thing is that it is free of debris and not spoiled. With wet hands, divide the minced meat into equal parts and form them into cutlets. Place in a bowl with flour.
STEP 9
A baking dish, I have 20*15 centimeters, grease with vegetable oil. Dredge the cutlets on all sides in flour and place tightly in the pan.
STEP 10
Place the pan in an oven preheated to 180 degrees and bake the cutlets for about 20 minutes. The cutlets should thicken and become elastic. This is to prevent them from falling apart after adding the gravy.
STEP 11
While the cutlets are baking, peel the onion and chop finely. Pour vegetable oil into a heated frying pan and add onions. Fry over medium heat, stirring occasionally for 3 minutes.
STEP 12
Wash the carrots with a brush in running water, peel, rinse and grate on a fine grater. Add it to the pan with the onions.
STEP 13
Place over medium heat and fry for another 2 minutes.
STEP 14
Add tomato sauce to the pan, add water and stir. Instead of tomato sauce, you can use ketchup in the same proportion. Or tomato paste, but 2 times less.
STEP 15
Add sour cream to the pan. Take good quality sour cream, without vegetable fats, so that it does not curl into flakes later.
STEP 16
Salt and pepper everything and add a little sugar to balance the acidity from the tomato. Stir, bring to a boil, but do not boil.
STEP 17
Remove the meatballs from the oven and pour the prepared gravy over them.
STEP 18
Return the pan to the oven and bake the cutlets in the gravy for 15 minutes. The times are approximate and will depend on the operation of your oven.
STEP 19
Remove the cutlets from the oven and serve immediately. Absolutely any side dish goes well with juicy cutlets in the oven with tomato sauce, due to the fact that they are served with gravy.
