Minced hedgehogs with rice in the oven

STEP 1
Take rice (it is better if it is hard and long so that it does not boil too much, because the hedgehogs’ “thorns” will be made from rice), boil it in double the volume of water, cool slightly and rinse it.

Grind the ripe carrots on a fine grater...

...and finely chop the onion and garlic or pass through a meat grinder until a paste forms.

Grind pork and beef in a meat grinder. Salt the resulting minced pork and beef, season with ground black pepper...

Now let’s form the mass into small, neat balls like meatballs.

Mix tomato paste with broth.
STEP 9
Take an oven dish with a lid, put the hedgehogs in it and fill them with broth and tomato paste. If you don't have a mold with a lid, you can simply cover the top with foil.
STEP 10
Bake in the oven at 180 degrees for 50 minutes.
STEP 11
Minced hedgehogs with rice and gravy in the oven are ready!
