This mainly concerns the consistency of the finished manna. It turns out either very dense, airless, or there are grains of semolina in it, which also spoils the overall impression of the baked goods.     Prepare the ingredients. To prepare manna with raspberries on kefir we will need: flour, semolina, kefir, egg, butter, sugar, baking powder, soda and raspberries.

    Pour semolina with kefir. Stir and leave to swell for 25-30 minutes. This is a very important point. The cereal should swell well, then the manna will turn out porous, soft and homogeneous. Otherwise, grains of semolina will be felt in the finished pie. And one more important point: the dough must be mixed well so that the kefir is evenly distributed throughout the cereal. You can stir the dough 1-2 more times while waiting.

    Melt the butter and cool.

    Add sugar, egg and melted butter to the swollen semolina. Mix thoroughly until smooth.

    Sift flour with baking soda and baking powder.

    Sort the raspberries, wash, dry and remove the stems. For manna, as well as for any baked goods, it is better to take whole, dense berries so that they do not get crushed during mixing.

    Transfer the raspberries to a greased baking dish. Bake the manna in an oven preheated to 180°C for about 40 minutes.

There is such a variety of mannikovs that you just have time to try them! I had already prepared mannik according to Maria’s recipe, but then I was looking for ingredients: I had to use kefir and frozen raspberries from last year’s harvest. The recipe was perfect. I took the main ingredients in a faceted glass, added 50 grams of oil (as much as I had), but I took 2 eggs (they were small C1), and only used 0.5 tsp. soda Beat the eggs and sugar separately until fluffy, the rest of the steps follow the recipe. Yes, knowing my oven, I baked it at 190° ~ 45 minutes. It turned out very tasty: slightly moist, but the dough was light and crumbly. Raspberries give a slight sourness, combined with a sweet dough, that’s it. The baked goods go great with tea at home, and everyone was happy. Thanks for the recipe!
