Machanka (mochanka) in Belarusian with pancakes

STEP 1
How to make machanka in Belarusian with pancakes? To begin, prepare the ingredients according to the list. You can start cooking with pancakes or sauce. I first prepared the dough for pancakes. Use premium flour. It is better to take large, selected eggs.
STEP 2
In a bowl, combine room temperature eggs, sugar and salt. Whisk until smooth. Wash the eggs first to remove any dirt from them.
STEP 3
Pour 200 ml of milk into the egg mixture and stir.
STEP 4
Add the sifted flour and stir until smooth. While stirring, pour in the remaining milk. Remember that you may need less or more flour, you can read more about this in the article, the link to it is at the end of the recipe.
STEP 5
At the end, pour in the vegetable oil and stir thoroughly. You can replace vegetable oil with melted butter. Let the dough sit for 10-15 minutes to allow the gluten to develop in the flour.
STEP 6
Heat a frying pan over medium heat. Pour some batter into a ladle and quickly spread over the entire surface of the pan. Bake the pancake for 2-3 minutes until golden brown, then turn over to the other side and fry for the same amount. Fry the rest of the pancakes in the same way. STEP 7
When the pancakes are ready, or while frying the pancakes, prepare the machanka.
STEP 8
Cut both types of brisket into small cubes. You can cut off the skin from the brisket.
STEP 9
Wash the mushrooms, cut in half and cut into slices. The mushrooms should be felt in the sauce.
STEP 10
Cut the onion into cubes.
STEP 11
Place both types of brisket in a frying pan and, stirring, fry over medium heat until golden brown. Vegetable oil is not required here; there is enough fat in the brisket.
STEP 12
Add the onion and fry everything together for 3-4 minutes. Add mushrooms. Simmer over low heat, covered, for 5-7 minutes.
STEP 13
Add flour and mix thoroughly.
STEP 14
Pour in boiling water and stir. If you want more sauce, add more boiling water.
STEP 15
Simmer, stirring, for about 5 minutes. Add sour cream, salt and pepper and bring to a boil. Remove the pan from the heat. The machanka is ready.
STEP 16
Serve hot pancakes with machanka with mushrooms and sour cream. Pancakes can be dipped in sauce or spread on pancakes. Bon appetit!
